Smashed Avocado Toast with Fried Egg: The Breakfast(-for-Dinner) of Champions
If you're a regular reader/total fangirl of my blog, I know what you're thinking. Yes, I have already written and posted a recipe for avocado toast. It's called 'Avocado Toast with Fried Egg (for quick sexy people)' and it's great. But it is a little simple, given that it's a 2-minute breakfast recipe, for people who wake up 20 minutes before class and spend 17 of those precious minutes doing their hair. If you're more of a 10-12 minute coiffeur, this recipe gives you a slightly more exotic bent on the sexy world of avocado toast.
Eitherway, I had this for brinner, a.k.a. 'breakfast-for-dinner' yesterday and it was amazing!

Avocado toast with egg, take two |
Ingredients:
1 ripe avocado, peeled and stoned
2 slices of sourdough bread, toasted
½ teaspoon garlic powder
1 teaspoon red chilli flakes or chilli powder (they're both great so follow your heart)
½ teaspoon cracked black pepper
1 egg
1 small lump of unsalted butter
Sea salt for sprinkling
A very small handful of grated mozzarella cheese (enough to sprinkle over an egg, not enough to cover the area of Luxembourg)
Method:
In a frying pan or skillet, melt the butter on a medium high heat.
Crack the egg into the pan and fry to your liking, most likely for less than 5 minutes. Right before it's done, sprinkle the mozzarella cheese on it, and take the pan off the heat. The cheese will melt into the egg as the egg slowly finishes cooking in the still-warm pan
While the cheese slowly melts onto the egg, finely chop the avocado and sprinkle with the pepper, garlic powder, and half of the chilli powder (or crushed chilli flakes, in my photo above, I used powder). Using a fork, smash the avocado in a bowl with the spices. Congratulations - you've just made a passable form of makeshift guacamole! (Add a little lime juice and it'll keep in the fridge for a day or two!)
Spread your passable form of makeshift guacamole over the toasted bread. Top with the fried egg, sprinkle with more chilli powder or flakes, and serve immediately. Or stare at it with pure, unadulterated lust in your eyes for around 40 seconds, and then serve.
Not exotic enough for you? Try the following suggestions:
- Add slices of tomato and red onion before topping with the egg.
- Smash the two slices of bread together and make a f****** sandwich. I f****** dare you.
- Garnish with some fresh cilantro.
- Sprinkle some feta cheese over the smashed avocado toast in lieu of mozzarella. Or keep the mozzarella because if you're a serious diva you might need two types of cheese to start your day.
- Add a spoonful of salsa.
- Add some veggie/vegan bacon for an even more protein-y dish.
- Actually use enough mozzarella to cover the area of Luxembourg.
